Glycine (also known as aminoethanoic acid) is the simplest amino acid in structure. Its chemical formula is C₂H₅NO₂. It is a white crystalline powder, odorless, with a special sweet taste, and is soluble in water. It is a non-essential amino acid for the human body and is also the only natural amino acid without a chiral center. It plays a dual role in biological systems as both a raw material for protein synthesis and an inhibitory neurotransmitter. Glycine is recognized as a safe food additive (GB 2760, with the function of flavor enhancer), possessing unique characteristics such as distinctly sweet taste, pH regulation, metal ion complexation, and inhibition of microbial growth. Therefore, it is widely used in food flavoring, medicine and nutrition, pesticide synthesis, feed, and the cosmetics industry.
