Application:
Used for bread; Preservatives for pastries and cheeses and fungicides for feed.
As a preservative for food, calcium propionate is mainly used in bread, because sodium propionate increases the pH value of bread and delays the fermentation of dough.
Sodium propionate is commonly used in pastries because the leavening of pastries is done using synthetic leavening agents without yeast development problems caused by pH rise. The effect of sodium propionate is better than calcium propionate when it is used as preservative for feed.
But calcium propionate is more stable than sodium propionate. Propionate is used in food except bread; Pastry. Besides cheese, it can also be used to prevent mildew and inhibit the refermentation of soy sauce.
