Pigments are the common name for colorants in food additives. Their main function is to give food its color or improve its sensory properties. Currently, in China's national standard GB 2760, there are over 60 types of colorants that are permitted for use. They can be classified into two major categories based on their sources: natural colorants and synthetic colorants.

 

Natural colorants are derived from plants, animals, or microorganisms. They have higher safety but poorer stability and higher prices. Common varieties include: red koji red, capsicum red, β-carotene, turmeric, gardenia yellow, beet red, copper sodium chlorophyllin, caramel color, red sorghum, grape skin red, purple sweet potato pigment, coccineal red, and algae blue, etc.

 

Synthetic colorants are chemically synthesized using chemical products as raw materials. They have bright colors, strong coloring power, are not prone to fading, and have lower costs. However, their usage range and dosage must be strictly controlled. According to their chemical structure, they are divided into azo pigments (such as amaranth, cochineal red, sunset yellow, lemon yellow, new red, temptation red, acid red, etc.) and non-azo pigments (such as euglena red, brilliant blue, indigo, etc.).

 

Application:

I. Beverages
In products such as carbonated beverages, fruit juice beverages, protein drinks, tea beverages, and sports drinks, lemon yellow, sunset yellow, brilliant blue, and carmine are widely used to give the products bright colors. Usually, water-soluble pigments are directly used and different proportions are combined to achieve a rich color palette.

II. Confectionery and Chocolate
In products such as hard candies, soft candies, chewing gum, tablet candies, and chocolate products, lemon yellow is used for candy coloring, carmine is used for sugar coating and flavor coating, and temptation red is used for chewing gum and sugar coating coating to prevent color transfer to the hands.

III. Baking and Pastries
In products such as cake frosting decoration, pastry coloring, biscuit filling, bread coating, and mooncake surface decoration, pigments such as alizarin red, indigo, lemon yellow, sunset yellow, brilliant blue, and carmine can all be used. Alizarin red in powder form is particularly commonly used in frosting decoration due to its good heat resistance.

IV. Frozen Drinks
In products such as ice cream, ice cream, and popsicles, lemon yellow, sunset yellow, carmine, and brilliant blue are widely used to make frozen drinks present bright and attractive colors.

V. Preserved Fruits and Jam
In products such as preserved fruits, jam, and jelly, sunset yellow, carmine, temptation red are used to improve color and increase appeal; lemon yellow, amaranth red, indigo, carmine, and brilliant blue can be used in pickled vegetables.

VI. Seasonings and Meat Products
In products such as biscuits, baked food fillings, biscuits fillings, bread coatings, and mooncake surface decorations, turmeric, acidic red, temptation red are used for color adjustment; pigments such as lemon yellow, amaranth red, indigo, carmine, and brilliant blue can also be used to improve the appearance of meat sausages and other products.

VII. Medicine and Cosmetics
In sugar-coated tablets, coated tablets, capsule shells, and oral liquids of medicines, brilliant blue, lemon yellow, carmine are used for drug identification and appearance improvement; pigments such as lemon yellow, amaranth red, indigo, carmine, and brilliant blue are used in cosmetics such as toothpaste, shampoo, skin care products, and lip products.

VIII. Other Foods and Industrial Applications
They are also used in products such as puffed foods, cocoa products, bean products, and instant noodle seasoning packets; in addition, they are also used for color adjustment and marking in pet food, printing inks, and industrial products.
