Coconut oil is a natural plant oil extracted by pressing or extracting the flesh of coconut fruits. At room temperature, it appears as a white or light yellow solid. When heated above approximately 25℃, it melts into a clear liquid. The commercially available coconut oil is mainly divided into two categories: virgin coconut oil (raw coconut oil) and refined coconut oil (processed coconut oil). Virgin coconut oil is produced by mechanically pressing fresh coconut meat and does not undergo chemical treatment, thus retaining the natural aroma, flavor, and antioxidant active substances such as phenols of the coconut to the greatest extent. Refined coconut oil, on the other hand, uses dried coconut meat (dried coconut flakes) as the raw material and undergoes pressing followed by refining processes such as de-colorization and de-odorization. The final product has a mild flavor, almost no coconut aroma, and a slightly yellowish color. Some trace nutrients are lost during the refining process. The core component of coconut oil is saturated fatty acids (accounting for over 90%), with lauric acid being the main component (about 45%-51%), and it is rich in medium-chain triglycerides (MCT, about 60%). These fatty acids can be rapidly metabolized by the human body for energy supply. Due to its unique fatty acid composition and excellent physical and chemical properties, coconut oil is widely used in various fields such as food cooking, medical and health care, cosmetics, and industrial manufacturing.

I. Food and Cooking
