Citric acid monohydrate (chemical formula: C6H8O7·H2O), as a common crystalline form of citric acid, is an acidity regulator and is widely used in the fields of food, beverages, chemicals, pet food, etc. It is an organic acid naturally present in citrus fruits and also an important intermediate in biological metabolism (the tricarboxylic acid cycle).
Application
1.Citric acid monohydrate is extensively applied in beverages, candies, biscuits, canned foods and dairy products. It acts as acidulant, flavor improver and preservative in food industry.
2.It can be used as antioxidant for edible oil, inhibiting oil deterioration and prolonging storage time of oil products.
